25 Days of Recipes Day 14 - and other schtuff

The recipe for today is..

Sweet Potato Souffle'- this recipe is from my Aunt Cindy and it's to die for!

Sweet Potato Soufflé

1 40 oz can sweet potatoes- drained and mashed
1 1/2 c.sugar
2 eggs
1/2 c. evaporated milk
1/4 tsp. nutmet
1/2 tsp.cinnamon
6 T butter, softened
Combine all ingredients with electric mixer. Pour into a greased bakin gdish. Bake 350 degrees for 35-45 minutes or until firm. Add topping and bake 15 min. more.


6 T butter
1/2 c. chopped pecans
1/2 c. brown sugar
3/4 c. crushed cornflakes
Melt butter and brown sugar. Add nuts and cornflakes. Spread over the top of the soufflé.

Well, THAT day..the day every Mother dreads, the day when your child comes to you and asks you not to kiss them in front of their friends ... that day was today :-( sniff sniff. My son Zach was cuddling on the bed with me this morning before getting up for school and I was giving him lots of kisses and he said " Mom I like it when you kiss me, but can you not kiss me in the classroom when you leave today? The kids laugh at me" awwwwwwwwwwwww breaks my heart that 1. he has to be worried about that in1st grade already and 2. that I can't kiss him goodbye anymore and 3. my babies are growing up to fast. Makes me cry, where does the time go ?
I just don't like leaving them anywhere without at least a hug and preferably a kiss. Isn't to early for this ? :-(

On a brighter note, the local newspaper called yesterday, they want to do an article in the paper about me and scrapbooking and making the cover of the MM idea book. How cool is that ? I have to get cleaning.. the editor is coming to my HOUSE! ahhhhhhhhh my scrap area is a disaster!!!! You know what I'll be doing this weekend!

I have some work to share today, we were lucky enough to have Scenic Route sponsor our DT at AMM. We used the Roxbury line, and I LOVED it! It's classic with a twist!
